  • 130G Najma Premium Turkey Rashers
  • - Potts Vegetable Stock Can
  • 200G All Things Butter Unsalted Butter
  • 50G Pepper Black Ground BWFO
  • - Thomas Ridley Fresh British Turkey Breast Fillets
  • - Ducros Dried Thyme
  • 15 Kg Caputo Red Strong Flour, 15Kg

Instructions

  1. 1. Preheat the oven to 180 degrees.
  2. 2. In a saucepan, combine 175 g of puy lentils and 1 vegetable stock cube with enough water to cover. Bring to a boil, then reduce the heat and simmer for 15 minutes. Drain and set aside.
  3. 3. Heat 1 tablespoon of olive oil in a stove-to-oven pan over medium heat. Add 700 g of turkey breast pieces and cook until browned on all sides. Remove the turkey from the pan and set aside.
  4. 4. In the same pan, add 1 finely chopped onion and 4 minced garlic cloves. Sauté until the onion is translucent, then remove from the pan.
  5. 5. Add 200 g of diced turkey bacon to the pan with an additional tablespoon of olive oil if needed. Cook until browned.
  6. 6. Return the turkey, onion, and garlic to the pan. Stir in 4 teaspoons of dried thyme, 3 cups of chopped carrots, and the cooked lentils. Mix well to combine.
  7. 7. Season with salt and pepper to taste, then add 500 ml of vegetable stock. Stir to combine, cover the pan, and transfer it to the oven. Bake for 30 minutes.
  8. 8. While the casserole is baking, mix 1 tablespoon of softened butter with 4 teaspoons of flour to form a paste.
  9. 9. After 30 minutes, remove the pan from the oven and stir the butter-flour paste into the casserole to thicken the sauce. Return the pan to the oven and bake for an additional 30 minutes, or until the vegetables are tender.
  10. 10. Remove the casserole from the oven and adjust seasoning with additional black pepper if needed.
  11. 11. Serve the casserole warm and enjoy your diabetic-friendly dinner.
