Instructions
- 1. Preheat the oven to 180 degrees.
- 2. In a saucepan, combine 175 g of puy lentils and 1 vegetable stock cube with enough water to cover. Bring to a boil, then reduce the heat and simmer for 15 minutes. Drain and set aside.
- 3. Heat 1 tablespoon of olive oil in a stove-to-oven pan over medium heat. Add 700 g of turkey breast pieces and cook until browned on all sides. Remove the turkey from the pan and set aside.
- 4. In the same pan, add 1 finely chopped onion and 4 minced garlic cloves. Sauté until the onion is translucent, then remove from the pan.
- 5. Add 200 g of diced turkey bacon to the pan with an additional tablespoon of olive oil if needed. Cook until browned.
- 6. Return the turkey, onion, and garlic to the pan. Stir in 4 teaspoons of dried thyme, 3 cups of chopped carrots, and the cooked lentils. Mix well to combine.
