Ingredients
- 50G Picard Chopped Flat Parsley
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 50G Pepper Black Ground BWFO
- - Forest Whole Foods Organic White Quinoa
- 200 G Authentic Greek Yogurt
- 250G Holland & Barrett Nutritional Yeast Flakes
- - Schwartz Paprika
Instructions
- 1. Preheat your oven to 350°F (175°C) and grease a 2-quart baking dish.
- 2. In a large bowl, combine 3 cups of cooked quinoa, 1 cup of mixed vegetables, 2/3 cup of finely chopped onion, 1 cup of greek yogurt, 2 tablespoons of chopped parsley, 1 bay leaf (remove before baking), and 1/2 teaspoon of black pepper. Mix well until all ingredients are evenly distributed.
- 3. Transfer the mixture into the prepared baking dish, spreading it out evenly.
- 4. Sprinkle 1 cup of nutritional yeast over the top and lightly dust with paprika for added color and flavor.
- 5. Bake in the preheated oven for 30 minutes, or until the top is golden and the dish is heated through.
- 6. Remove from the oven and let cool for 10 minutes before serving. Garnish with additional parsley if desired.
