Ingredients
- 370G Belazu Mixed Beans
- 10Cm Guanajuato White Corn Tortillas, 10Cm
- 400G Casa Marrazzo Peeled Organic Tomatoes, 400G
- - Asafoetida Bwfo Free Uk Mainland P&P
- 1 Block Greek Feta Cheese 900g
- 60G Little Leaves Lambs Lettuce
- 1 Kg Tomatoes 1kg
- 500G White Pearl Italian Pudding Rice 500g
- - Ktc Vegetable Oil
- - Mill & Mortar Finishing Salt Flakes Gift Set
Instructions
- 1. Heat 2 tablespoons of oil in a pan over medium heat. Add 3 cups of cooked beans and a pinch of hing. Cook while stirring for 5-7 minutes until the beans are dry and slightly crisp. Set aside.
- 2. In a separate pan, heat 2 tablespoons of oil over medium heat. Fry 12 corn tortillas one at a time until they are golden and crispy. Drain on paper towels and set aside.
- 3. Take one fried tortilla and spread a generous layer of the cooked beans on top.
- 4. Sprinkle 200 g of grated white cheese evenly over the beans.
- 5. Top with slices of 3 fresh tomatoes and shredded leaves from 1/2 head of lettuce.
- 6. Squeeze the juice of 1 lemon over the toppings and sprinkle with salt to taste.
- 7. Serve immediately as a standalone dish or pair with a side of spiced rice for a complete meal.
