Ingredients
- 1 Kg Carrots - 1kg
- 1 piece Yellow Bell Pepper
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 100 G Jumbo Garlic 100g
- - Ginger - 100g
- - Kikkoman Soy Sauce
- 450G Rice Flour, 450G
- - Ktc Vegetable Oil
- - Rajah Whole Red Chillies
- 1 Bunch Spring Onions 1 Bunch
- 400G Whole Chickpeas In Water
Instructions
- 1. Soak soy chunks in hot water for 10 minutes, then drain and squeeze out excess water.
- 2. Mix rice flour, cornstarch, chili flakes, and a pinch of salt in a bowl. Coat soy chunks evenly with the mixture.
- 3. Heat vegetable oil in a pan and fry the coated soy chunks until golden and crispy. Remove and set aside.
- 4. In the same pan, sauté minced garlic and ginger until fragrant, about 1 minute.
- 5. Add sliced onions, carrots, and bell peppers, stirring frequently over medium heat until slightly tender.
- 6. Stir in soy sauce and water, letting the sauce thicken slightly while mixing well.
- 7. Add the crispy soy chunks to the pan, tossing everything together to coat evenly with the sauce.
- 8. Garnish with chopped spring onion greens for freshness and serve hot.
