Ingredients

  • 1 Kg Carrots - 1kg
  • 1 piece Yellow Bell Pepper
  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 100 G Jumbo Garlic 100g
  • - Ginger - 100g
  • - Kikkoman Soy Sauce
  • 450G Rice Flour, 450G
  • - Ktc Vegetable Oil
  • - Rajah Whole Red Chillies
  • 1 Bunch Spring Onions 1 Bunch
  • 400G Whole Chickpeas In Water

Instructions

  1. 1. Soak soy chunks in hot water for 10 minutes, then drain and squeeze out excess water.
  2. 2. Mix rice flour, cornstarch, chili flakes, and a pinch of salt in a bowl. Coat soy chunks evenly with the mixture.
  3. 3. Heat vegetable oil in a pan and fry the coated soy chunks until golden and crispy. Remove and set aside.
  4. 4. In the same pan, sauté minced garlic and ginger until fragrant, about 1 minute.
  5. 5. Add sliced onions, carrots, and bell peppers, stirring frequently over medium heat until slightly tender.
  6. 6. Stir in soy sauce and water, letting the sauce thicken slightly while mixing well.
  7. 7. Add the crispy soy chunks to the pan, tossing everything together to coat evenly with the sauce.
