  1. 1. Preheat your oven to 190°C (375°F) and lightly grease a baking dish with olive oil.
  2. 2. Wash and halve the bell peppers lengthwise, removing the seeds and membranes inside.
  3. 3. Heat olive oil in a skillet over medium heat and sauté the minced garlic and chopped onion for 2 minutes.
  4. 4. Add fresh spinach to the skillet and cook until wilted, stirring occasionally for about 3 minutes.
