Corn Rice Flour Fritters recipe

Ingredients

  • - Cofresh Whole Green Chilli 350g
  • 640G Birds Eye Supersweet Sweetcorn
  • 100G Halen Mon Umami Sea Salt, 100G
  • 450G Rice Flour, 450G
  • 1 L Crisp N Dry Oil
  • - Mccormick Cumin Powder
  • 250 Ml Ktc Linseed Oil

Instructions

  1. 1. Shear the corn kernels off the cob and transfer them to a food processor.
  2. 2. Add 1/4 teaspoon cumin powder, 1 finely chopped green chili, and 1/2 teaspoon salt to the food processor. Blend until a coarse and chunky thick paste forms.
  3. 3. If the batter appears runny, add 2 tablespoons of rice flour and mix well to achieve a cookie batter-like consistency.
  4. 4. Heat 2 cups of canola oil in a deep pan over medium heat until hot.
  5. 5. Using a cookie dough scoop, take portions of the batter, flatten them slightly on your palm, and gently drop them into the hot oil.
  6. 6. Fry the fritters until golden brown on both sides, flipping as needed. Remove with a slotted spoon and place on paper towels to absorb excess oil.
  7. 7. Serve the fritters hot with your choice of chutney or Jain-friendly aioli.
