Instructions

  1. 1. Rinse the millet thoroughly and soak it in water for 15 minutes.
  2. 2. Rehydrate the soy chunks in warm water for 10 minutes and squeeze out excess water.
  3. 3. Heat coconut oil in a pan and add cumin seeds, letting them sizzle for 30 seconds.
  4. 4. Add finely chopped onions, ginger, and garlic, sautéing until golden and aromatic.
  5. 5. Stir in chopped tomatoes, turmeric, coriander powder, and garam masala, cooking until the tomatoes soften.
  6. 6. Add the soy chunks, stirring to coat them evenly with the spices.
  7. 7. Pour in coconut milk and water, bringing the mixture to a gentle boil.
  8. 8. Drain the millet and add it to the pan, stirring well to combine.
  9. 9. Reduce the heat to low, cover, and let it simmer until the millet is cooked and fluffy.
