- 2. Roast coriander seeds and dry red chilies in a dry pan until aromatic, then grind into a coarse powder.
- 3. Heat oil in a large skillet and sauté chopped onions until golden brown and caramelized.
- 4. Add garlic, ginger, and curry leaves to the onions, stirring for 2 minutes to release their aroma.
- 5. Mix in the ground spice powder, turmeric, and chopped tomatoes, cooking until the tomatoes are soft and well incorporated.
