A fragrant and flavorful dry chicken dish from coastal Karnataka, cooked with aromatic spices and coconut, perfect for dinner with steamed rice or neer dosa.
Ingredients
- 1 Bunch Spring Onions 1 Bunch
- 250G Garlic 250g
- 1 Kg Wild Rice, 1Kg
- 450G Shazans Chicken Diced Breast
- - Shan Chilli Pickle
Instructions
- 1. Wash and cut the chicken thighs into bite-sized pieces, then set them aside.
- 2. Heat coconut oil in a pan and fry the coriander seeds and dry red chilies until aromatic.
- 3. Add grated coconut and roast it until golden brown, then grind it into a paste with a little water.
- 4. In the same pan, add more coconut oil and sauté chopped onions until translucent.
- 5. Add minced garlic and curry leaves to the onions, stirring for a few minutes.
- 6. Add chopped tomatoes and turmeric powder, cooking until the tomatoes soften completely.
- 7. Add the chicken pieces to the pan and mix well with the onion-tomato base.
- 8. Pour the prepared coconut paste into the chicken mixture, stirring to coat evenly.
- 9. Add salt and a splash of water, then cover and cook on medium heat until the chicken is tender.
- 10. Remove the lid and cook uncovered for another 5 minutes to thicken the gravy.
- 11. Garnish the dish with fresh curry leaves and serve hot with steamed rice or neer dosa.
