Ingredients

  • 300G Picard Msc Scallops With Tomato & Rosemary
  • 1 Kg Jj Large Prawns (90/120, 700g Net) 1x1kg
  • 1 Piece Red Bell Pepper, 1pcs | Gopuff
  • 400G Casa Marrazzo Peeled Organic Tomatoes, 400G
  • 75Cl Mission Saint Vincent Bordeaux Blanc
  • 600 Ml Bristol Syrup Co Lime Juice, 600Ml
  • - Filippo Berio Garlic Flavoured Olive Oil
  • 225G The Tofoo Co. Original Seitan
  • 250G Shallot Onion - 250g
  • - Schwartz Coriander Leaf Jar
  • 220 Ml Encona Original Hot Pepper Sauce, 220Ml

Instructions

  1. 1. Remove the veins from the prawns and rinse them under cold water.
  2. 2. In a large bowl, combine 2 cups of white wine, 1 cup of lime juice, 1/8 teaspoon of hot pepper sauce, 1/4 cup of olive oil, and a handful of chopped coriander leaves to create the marinade.
  3. 3. Add the prawns, scallops, and seitan chunks to the marinade, ensuring all pieces are well-coated. Cover the bowl and refrigerate for 1 hour.
  4. 4. While the seafood marinates, chop the bell pepper and shallot into bite-sized pieces. Slice the tomatoes in half.
  5. 5. After marinating, thread the prawns, scallops, seitan, bell pepper, shallot, and tomatoes onto skewers, alternating ingredients for variety.
  6. 6. Serve the skewers chilled or at room temperature, garnished with additional coriander leaves if desired.
