Instructions

  1. 1. Lightly pound 2 chicken breasts to ensure even cooking and prevent shrinkage.
  2. 2. In a shallow bowl, beat 1 egg. Dip each chicken breast into the egg, then coat evenly with 1/4 cup bread crumbs.
  3. 3. Heat 3 tablespoons olive oil in a large skillet over medium heat. Add the breaded chicken breasts and sauté until golden brown on both sides, about 4-5 minutes per side. Remove the chicken and set aside.
  4. 4. Clean the skillet and return it to medium heat. Add 1/3 cup orange juice, 1/3 cup marmalade, 1 tablespoon lemon juice, 1 tablespoon orange peel, 1/2 tablespoon mustard, 1 teaspoon soy sauce, and 1 minced clove of garlic. Stir the mixture until smooth and slightly thickened, about 3-4 minutes.
  5. 5. Return the chicken breasts to the skillet, coating them with the citrus glaze. Cover and cook for an additional 10 minutes, or until the chicken is fully cooked and tender.
  6. 6. Serve the chicken hot, drizzled with the remaining citrus glaze from the skillet.
