Instructions
- 1. Lightly pound 2 chicken breasts to ensure even cooking and prevent shrinkage.
- 2. In a shallow bowl, beat 1 egg. Dip each chicken breast into the egg, then coat evenly with 1/4 cup bread crumbs.
- 3. Heat 3 tablespoons olive oil in a large skillet over medium heat. Add the breaded chicken breasts and sauté until golden brown on both sides, about 4-5 minutes per side. Remove the chicken and set aside.
- 4. Clean the skillet and return it to medium heat. Add 1/3 cup orange juice, 1/3 cup marmalade, 1 tablespoon lemon juice, 1 tablespoon orange peel, 1/2 tablespoon mustard, 1 teaspoon soy sauce, and 1 minced clove of garlic. Stir the mixture until smooth and slightly thickened, about 3-4 minutes.
- 5. Return the chicken breasts to the skillet, coating them with the citrus glaze. Cover and cook for an additional 10 minutes, or until the chicken is fully cooked and tender.
- 6. Serve the chicken hot, drizzled with the remaining citrus glaze from the skillet.
