  • 600 Ml Bristol Syrup Co Lime Juice, 600Ml
  • 1 L Olive Oil – Organic
  • 1 piece Yellow Bell Pepper
  • 1 Kg Red Onion 1kg
  • - Potts Vegetable Stock Can
  • 3 Pack Ready To Eat Avocado I Ripe Avocado I Fresh I Pack Of 3
  • 500 G Fresh Vine Tomato 500g
  • - Olives Et Al Fiery Jalapeño Stuffed Olives
  • 100 G Jumbo Garlic 100g
  • - Greenfields Black Peppercorns
  • 100G Gran Luchito Chipotle Chilli Paste
  • - Tata Salt

Instructions

  1. 1. Press the tofu to remove excess water, then cut it into bite-sized cubes.
  2. 2. Whisk together chipotle paste, lime juice, olive oil, and a pinch of salt to create the marinade.
  3. 3. Coat the tofu cubes in the marinade and set aside for 10 minutes to absorb flavors.
  4. 4. Cook the rice in vegetable stock until fluffy, then stir in chopped cilantro and a squeeze of lime juice.
  5. 5. Slice the bell peppers and onion into thin strips and sauté in olive oil until tender and slightly charred.
  6. 6. Pan-fry the marinated tofu in a non-stick skillet until golden and crispy on all sides.
  7. 7. Dice the tomato, jalapeño, and garlic for fresh salsa, mixing them with salt and lime juice.
  8. 8. Slice the avocado into thin wedges and set aside for topping.
  9. 9. Assemble the bowl starting with cilantro lime rice as the base.
  10. 10. Layer the sautéed veggies, crispy tofu, avocado slices, and fresh salsa on top.
