- 600 Ml Bristol Syrup Co Lime Juice, 600Ml
- 1 L Olive Oil – Organic
- 1 piece Yellow Bell Pepper
- 1 Kg Red Onion 1kg
- - Potts Vegetable Stock Can
- 3 Pack Ready To Eat Avocado I Ripe Avocado I Fresh I Pack Of 3
- 500 G Fresh Vine Tomato 500g
- - Olives Et Al Fiery Jalapeño Stuffed Olives
- 100 G Jumbo Garlic 100g
- - Greenfields Black Peppercorns
- 100G Gran Luchito Chipotle Chilli Paste
- - Tata Salt
Instructions
- 1. Press the tofu to remove excess water, then cut it into bite-sized cubes.
- 2. Whisk together chipotle paste, lime juice, olive oil, and a pinch of salt to create the marinade.
- 3. Coat the tofu cubes in the marinade and set aside for 10 minutes to absorb flavors.
- 4. Cook the rice in vegetable stock until fluffy, then stir in chopped cilantro and a squeeze of lime juice.
- 5. Slice the bell peppers and onion into thin strips and sauté in olive oil until tender and slightly charred.
- 6. Pan-fry the marinated tofu in a non-stick skillet until golden and crispy on all sides.
- 7. Dice the tomato, jalapeño, and garlic for fresh salsa, mixing them with salt and lime juice.
- 8. Slice the avocado into thin wedges and set aside for topping.
- 9. Assemble the bowl starting with cilantro lime rice as the base.
- 10. Layer the sautéed veggies, crispy tofu, avocado slices, and fresh salsa on top.
- 11. Garnish with extra cilantro leaves and a sprinkle of black pepper for added flavor.
