Instructions

  1. 1. Place 500 g of chicken in a large pot and cover with water. Bring to a boil, then reduce heat and simmer until the chicken is fully cooked, about 25-30 minutes.
  2. 2. Remove the chicken from the pot and set it aside to cool. Reserve the broth in the pot, keeping it at a low simmer.
  3. 3. In a mixing bowl, combine 2 cups of flour, 1 tsp of salt, 1/2 tsp of baking powder, 3 tbsp of chia seeds mixed with 9 tbsp of water, and 3/4 cup of milk. Stir until a thick batter forms.
  4. 4. Using a tablespoon for large dumplings or a teaspoon for smaller ones, drop spoonfuls of the batter into the simmering broth. Cook the dumplings for 8-10 minutes, or until they are firm and cooked through.
  5. 5. While the dumplings cook, remove the bones from the cooled chicken and shred the meat into bite-sized pieces.
  6. 6. Add the shredded chicken back into the pot with the dumplings and simmer for an additional 5 minutes to heat through.
  7. 7. Serve the stew hot, ensuring each bowl has a generous portion of chicken and dumplings.
