- 290G Portland Mills Jamaican Curry Powder, 290G

- 1. Preheat your oven to 375°F (190°C) and grease a 15x10x2-inch baking pan.
- 2. In a small saucepan, combine 1 cup apricot preserves, 1/4 cup mustard, and 1 teaspoon curry powder. Cook over low heat, stirring constantly, until the preserves are melted and the mixture is smooth.
- 3. Brush each of the 4 chicken breast halves generously with the apricot mixture, ensuring they are evenly coated.
