Instructions
- 1. Heat 4 tablespoons of olive oil over medium heat in a 3-quart pan.
- 2. Add 1 finely chopped white onion and 3 minced garlic cloves. Cook until the onion is translucent.
- 3. Stir in 2 tablespoons of tomato paste and cook for 2-3 minutes, ensuring the mixture is well coated.
- 4. Pour in 1 1/2 cups of red wine and add enough hot water to just barely cover the mixture.
- 5. Add 1 tablespoon of wine vinegar, 1 bay leaf, 1 teaspoon of cumin, 1/2 teaspoon of cinnamon, and salt and pepper to taste. Stir well, reduce the heat to a simmer, and cover the pan.
- 6. Meanwhile, place 1 1/2 pounds of shallot onions in very hot water for a few minutes, then peel off the skins. Boil the peeled onions in salted water (1 teaspoon salt) for 3 minutes in a covered pot.
- 7. Drain the onions, rinse them with cool water, and set them aside.
- 8. In a separate frying pan, heat 3 tablespoons of olive oil over medium heat. Add the peeled onions and cook until they are golden brown, about 5-7 minutes.
- 9. Add the browned onions to the simmering mixture. Stir gently to combine and continue cooking for another 20-25 minutes, or until the sauce has thickened.
- 10. Remove the bay leaf and adjust seasoning if needed. Serve hot with your choice of side, such as crusty bread or mashed potatoes.
