Ingredients
- 1 Bunch Baby Spinach - Bunch
- - Cooks & Co Sliced Mushrooms
- 300G Hls Msc Hake Skin On Fillet Portions
- 250 ml Critida Lemon Infused Olive Oil 250Ml
- - Mill & Mortar Finishing Salt Flakes Gift Set
- 60G Terre Exotique Cheeselovers Pepper, 60G
- 250 ml Balsamic Vinegar Honey 250Ml
Instructions
- 1. Preheat your oven to 375°F (190°C). Lightly grease a baking dish with 1 teaspoon of olive oil.
- 2. Place the hake fillets in the prepared baking dish. Drizzle 1 teaspoon of olive oil over the fillets and season with salt and pepper to taste. Bake for 10-15 minutes, or until the fish flakes easily with a fork.
- 3. While the fish is baking, heat 2 tablespoons of olive oil in a large sauté pan over medium heat.
- 4. Add 1/2 cup of sliced mushrooms to the pan. Cook for 10-15 minutes, stirring occasionally, until the mushrooms are tender.
- 5. Arrange 1/4 cup of fresh baby spinach leaves on each serving plate.
- 6. Once the fish is done, place it on top of the spinach leaves. Add the sautéed mushrooms around the fish.
- 7. Optionally, drizzle a small amount of balsamic vinegar over the spinach and vegetables before serving.
