Ingredients

  • 1 Kg Yellow/White Onion 1kg
  • - Cathedral City Mature Cheddar Cheese
  • 400G Sabarot Chia Seeds, 400G
  • 395G D'Aucy Chopped Spinach

Instructions

  1. 1. Preheat your oven to 325°F (160°C) and lightly grease a baking tin.
  2. 2. Wash 2 cups of spinach thoroughly, then cook it in a pan over medium heat until wilted. Drain the spinach and squeeze out excess moisture until very dry.
  3. 3. Finely chop 1 medium onion and combine it with the cooked spinach in a large mixing bowl.
  4. 4. Add 1 cup of shredded cheddar cheese and 6 tablespoons of chia seeds mixed with 18 tablespoons of water to the bowl. Mix thoroughly until the ingredients are well combined.
  5. 5. Roll the mixture into balls about the size of an egg yolk using your palms. Place the balls on a tray and freeze for 15 minutes to firm them up.
  6. 6. Remove the balls from the freezer and let them thaw for 5 minutes. Arrange them on the greased baking tin and bake in the preheated oven for 25 minutes or until golden brown.
