Instructions

  1. 1. Preheat your oven to 350°F (175°C) and lightly grease a baking sheet.
  2. 2. Cook 2 cups of chopped spinach in a skillet over medium heat until wilted, then drain thoroughly to remove excess moisture.
  3. 3. In a large mixing bowl, combine the cooked spinach, 1/2 cup oats, 1/2 cup grated Parmesan cheese, 1 finely chopped onion, 1 minced clove of garlic, 1 1/2 teaspoons dried thyme, 1/4 teaspoon salt, and 4 large eggs. Mix well until evenly combined.
  4. 4. Cover the mixture and refrigerate for at least 2 hours or overnight to allow the flavors to meld and the mixture to firm up.
  5. 5. Once chilled, form the mixture into 1-inch balls and place them on the prepared baking sheet.
  6. 6. Bake in the preheated oven for 30 minutes, or until the bites are golden brown and firm to the touch.
  7. 7. Serve hot as a main dish or alongside a fresh salad for a complete dinner.
