Instructions
- 1. Preheat your oven to 350°F (175°C) and lightly grease a baking sheet.
- 2. Cook 2 cups of chopped spinach in a skillet over medium heat until wilted, then drain thoroughly to remove excess moisture.
- 3. In a large mixing bowl, combine the cooked spinach, 1/2 cup oats, 1/2 cup grated Parmesan cheese, 1 finely chopped onion, 1 minced clove of garlic, 1 1/2 teaspoons dried thyme, 1/4 teaspoon salt, and 4 large eggs. Mix well until evenly combined.
- 4. Cover the mixture and refrigerate for at least 2 hours or overnight to allow the flavors to meld and the mixture to firm up.
- 5. Once chilled, form the mixture into 1-inch balls and place them on the prepared baking sheet.
- 6. Bake in the preheated oven for 30 minutes, or until the bites are golden brown and firm to the touch.
- 7. Serve hot as a main dish or alongside a fresh salad for a complete dinner.
