Instructions
- 1. Preheat your oven to 350°F (175°C).
- 2. Heat 2 tablespoons of cooking oil in a large skillet over medium heat. Add 1 cup of uncooked rice and stir frequently until the rice is lightly browned, about 5 minutes.
- 3. Add 1 pound of ground beef to the skillet and cook until browned and fully cooked, breaking it apart with a spoon, about 7-8 minutes.
- 4. Stir in 1 diced green pepper, 1 diced onion, 2 teaspoons of chili powder, and 1 teaspoon of salt. Cook for another 3-4 minutes until the vegetables are slightly softened.
- 5. Add 1 cup of tomato sauce and 2 cups of water to the skillet. Mix well and bring the mixture to a simmer.
- 6. Transfer the mixture to a 2-quart casserole dish. Cover the dish with a lid or aluminum foil and bake in the preheated oven for 30 minutes.
- 7. Remove the casserole from the oven, let it rest for 5 minutes, and serve warm.
