Ingredients

  • 200G Daylesford Organic Unsalted Butter
  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 500G White Pearl Italian Pudding Rice 500g
  • - Cooks & Co Sliced Mushrooms
  • - Knorr Stock Cubes Vegetable
  • 500 Ml Daylesford Organic Hot & Sour Vegetable Broth

Instructions

  1. 1. Preheat your oven to 350°F (175°C).
  2. 2. In a skillet, melt 2 tablespoons of butter over medium heat. Add 1 finely chopped onion and sauté until softened, about 3-4 minutes.
  3. 3. Stir in 1/2 cup of rice and cook for 2-3 minutes, allowing the rice to toast slightly.
  4. 4. Dissolve 2 vegetable stock cubes in 1 1/4 cups of vegetable broth. Pour the bouillon mixture into the skillet and stir well.
  5. 5. Add 1 cup of sliced mushrooms to the skillet and mix to combine.
  6. 6. Transfer the rice mixture to a 1 1/2-quart baking dish, spreading it out evenly.
  7. 7. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes, or until the rice is tender and the liquid is absorbed.
