Ingredients
- 200G Daylesford Organic Unsalted Butter
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 500G White Pearl Italian Pudding Rice 500g
- - Cooks & Co Sliced Mushrooms
- - Knorr Stock Cubes Vegetable
- 500 Ml Daylesford Organic Hot & Sour Vegetable Broth
Instructions
- 1. Preheat your oven to 350°F (175°C).
- 2. In a skillet, melt 2 tablespoons of butter over medium heat. Add 1 finely chopped onion and sauté until softened, about 3-4 minutes.
- 3. Stir in 1/2 cup of rice and cook for 2-3 minutes, allowing the rice to toast slightly.
- 4. Dissolve 2 vegetable stock cubes in 1 1/4 cups of vegetable broth. Pour the bouillon mixture into the skillet and stir well.
- 5. Add 1 cup of sliced mushrooms to the skillet and mix to combine.
- 6. Transfer the rice mixture to a 1 1/2-quart baking dish, spreading it out evenly.
- 7. Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes, or until the rice is tender and the liquid is absorbed.
- 8. Remove from the oven, fluff the rice with a fork, and serve warm.
