Instructions
- 1. Preheat your oven to 350°F (175°C).
- 2. Grease a pie plate or baking dish with butter to prevent sticking.
- 3. In a large mixing bowl, combine 1 cup of chickpea flour with 1 1/2 cups of water until well combined. Stir in 1/4 cup grated parmesan cheese, 1/4 teaspoon salt, and 1/4 teaspoon black pepper.
- 4. Add 2 cups of cooked quinoa, 2 diced bell peppers, and 1 finely chopped onion to the egg mixture. Mix thoroughly to combine all ingredients evenly.
- 5. Pour the mixture into the prepared pie plate, spreading it out evenly.
- 6. Bake in the preheated oven for 15 to 25 minutes, or until a knife inserted into the center comes out almost clean.
