Instructions
- 1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 2. Finely chop 1/3 cup onion and 1/3 cup bell pepper. Set aside.
- 3. In a large mixing bowl, mash 1 1/4 cups cooked lentils with a fork or potato masher until partially smooth.
- 4. Add the chopped onion, bell pepper, 1/3 cup finely chopped walnuts, 1 1/4 cups mashed potato, 1/4 teaspoon dried sage, and 1/2 teaspoon salt to the lentils. Mix well until the ingredients are evenly combined.
- 5. Form the mixture into patties, about 2-3 inches in diameter, and place them on the prepared baking sheet.
- 6. Bake the patties in the preheated oven for 15 to 20 minutes, flipping them halfway through, until they are golden brown and firm.
