About this recipe
A light and refreshing pescatarian dish featuring creamy avocado, tender shrimp, and tangy cocktail sauce served in artichoke cups. Perfect for a satisfying dinner starter or a main course for solution seekers.
Ingredients
- 50G Natoora Fresh Italian Flat Leaf Parsley
- 1Pc Avacado 1pc
- - Sunita Lemon Juice Organic
- - D'Amico Artichokes Roman Style Carciofi Alla Romana
- 200G Picard - Breaded Shrimp
- 250 Ml Payst Sweet Chilli Sauce, 250Ml
Instructions
- 1. Cut 1 avocado into small cubes and toss them with 2 tablespoons of fresh lemon juice to prevent browning.
- 2. Prepare 4 artichokes by trimming the stems, removing the tough outer leaves, and cutting off the top third of each artichoke. Steam the artichokes for 20-25 minutes until tender, then allow them to cool slightly.
- 3. Once the artichokes are cool enough to handle, carefully remove the center petals and scrape out the chokes with a spoon to create a cavity in each artichoke.
- 4. In a bowl, combine the lemon-coated avocado cubes with 3/4 cup of cooked, peeled shrimp. Mix gently to avoid mashing the avocado.
- 5. Spoon 1 tablespoon of sweet chilli sauce into the cavity of each artichoke.
- 6. Divide the avocado and shrimp mixture evenly among the artichokes, filling each cavity generously.
- 7. Top each artichoke with an additional tablespoon of sweet chilli sauce and garnish with a fresh parsley sprig.
- 8. Serve immediately as a light dinner or appetizer.
