Instructions

  1. 1. Preheat your oven to 180°C (356°F). Grease a baking dish lightly with olive oil.
  2. 2. Heat 1 tablespoon of olive oil in a pan over medium heat and sauté the cherry tomatoes, bell peppers, zucchini, and spinach for 5-7 minutes until slightly softened. Season with salt, black pepper, and hing.
  3. 3. In a small saucepan, melt the unsalted butter over low heat and whisk in the plain flour to create a roux. Slowly add the whole milk while stirring continuously to form a smooth sauce. Mix in the dried thyme and oregano.
  4. 4. Combine the cooked lentils with the sautéed vegetables in the greased baking dish and pour the prepared sauce evenly over the mixture.
