Instructions
- 1. Preheat your oven to 180°C (356°F). Grease a baking dish lightly with olive oil.
- 2. Heat 1 tablespoon of olive oil in a pan over medium heat and sauté the cherry tomatoes, bell peppers, zucchini, and spinach for 5-7 minutes until slightly softened. Season with salt, black pepper, and hing.
- 3. In a small saucepan, melt the unsalted butter over low heat and whisk in the plain flour to create a roux. Slowly add the whole milk while stirring continuously to form a smooth sauce. Mix in the dried thyme and oregano.
- 4. Combine the cooked lentils with the sautéed vegetables in the greased baking dish and pour the prepared sauce evenly over the mixture.
- 5. Sprinkle the shredded cheddar cheese on top to cover the bake evenly.
- 6. Bake in the preheated oven for 20-25 minutes until the cheese is golden and bubbly.
- 7. Remove from the oven and let cool for 5 minutes before serving warm. Garnish with a sprinkle of extra thyme if desired.
