Instructions
- 1. Preheat your grill or grill pan to medium-high heat (about 200°C).
- 2. In a small bowl, combine olive oil, lemon juice, garlic powder, smoked paprika, black pepper, and salt to create a marinade.
- 3. Coat the chicken breasts evenly with the marinade and let them sit for 10 minutes while the grill heats up.
- 4. Grill the marinated chicken breasts for 6-7 minutes per side, or until the internal temperature reaches 75°C. Let the chicken rest for 5 minutes before slicing into strips.
- 5. While the chicken is cooking, chop the lettuce, spinach, cucumber, cherry tomatoes, red onion, and bell peppers and arrange them into separate bowls for easy assembly.
- 6. Prepare the hard-boiled eggs by placing them in a saucepan of cold water. Bring to a boil, then reduce heat and simmer for 9 minutes. Cool in ice water, peel, and slice.
- 7. Toast the sunflower seeds in a dry pan over medium heat for 2-3 minutes until golden and fragrant.
- 8. Whisk together the Greek yogurt, Dijon mustard, apple cider vinegar, honey, salt, and pepper to make a creamy dressing. Transfer to a serving jar or bowl.
- 9. Set up the salad bar by arranging all the prepared ingredients, including the chicken, on a large table or counter. Include optional toppings like avocado, croutons, shredded cheese, and the yogurt dressing.
