Instructions
- 1. Prepare the ingredients: Thinly slice the chicken breast steaks and set aside. Peel and finely chop the red onion. Peel and mince the garlic. Wash and roughly chop the basil leaves.
- 2. Heat 2 tablespoons of cooking oil in a large frying pan or wok over medium-high heat.
- 3. Add the minced garlic and sliced red onion to the pan. Stir-fry for 1-2 minutes until fragrant and the onion begins to soften.
- 4. Add the sliced chicken breast to the pan. Stir-fry for 5-7 minutes until the chicken is cooked through and lightly browned.
- 5. Crumble 2-3 whole red chillies into the pan (adjust to your spice preference) and stir well.
- 6. In a small bowl, mix together 1 tablespoon of dark soy sauce, 1 tablespoon of oyster sauce, 1 tablespoon of fish sauce, 1 teaspoon of light brown soft sugar, 1 teaspoon of white granulated sugar, and 2 tablespoons of chicken bone broth. Stir until the sugar dissolves.
- 7. Pour the sauce mixture into the pan with the chicken and stir to coat evenly. Let it simmer for 2-3 minutes to allow the flavors to meld.
- 8. Add the chopped basil leaves to the pan and stir-fry for another 1-2 minutes until the basil is wilted and fragrant.
- 9. Serve the Thai Basil Chicken hot over steamed jasmine rice for a traditional option, or, if desired, with puffed rice cereal for a unique twist.
