Ingredients
- - Rajah Jeera Whole Cumin Seeds
- 100 G Jumbo Garlic 100g
- 500 G Fresh Vine Tomato 500g
- 500G Organic Black Turtle Beans, 500G
- 500G Organic Red Quinoa, 500G
- 750 G Top-Op Table Salt Drums
Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. Prepare the bell peppers by cutting them in half lengthwise and removing the seeds and membranes. Set them aside.
- 3. Rinse the Organic Red Quinoa thoroughly under cold water. In a medium saucepan, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the quinoa is tender and the water is absorbed. Fluff with a fork and set aside.
- 4. Drizzle some Pure Dairy Free Sunflower Spread over the bell peppers and place them cut side up on a baking sheet.
- 5. In a large pan over medium heat, add a tablespoon of Pure Dairy Free Sunflower Spread. Once melted, add finely chopped red onions and minced garlic cloves. Sauté until soft and fragrant, about 3-4 minutes.
- 6. Add chopped fresh vine tomatoes, Organic Black Turtle Beans (rinsed and drained), and the cooked quinoa to the pan. Stir well to combine.
- 7. Add Rajah Jeera Whole Cumin Seeds, Natco Kashmiri Chilli Powder, and Rajah Spices Ground Paprika Powder to the mixture. Cook for 5 minutes, stirring occasionally, to allow the spices to bloom and the flavors to meld.
- 8. Sprinkle in the Rose Rice Flour and stir to incorporate. Cook for another 2-3 minutes to slightly thicken the mixture.
- 9. Squeeze fresh lemon juice over the mixture and season with Top-Op Table Salt to taste. Mix well and remove the pan from heat.
- 10. Fill each bell pepper half with the quinoa and black bean mixture, pressing down gently to pack the filling.
- 11. Top each stuffed pepper with small dollops of Philadelphia Original Soft Cream Cheese.
- 12. Place the stuffed peppers in the preheated oven and bake for 25-30 minutes, or until the peppers are tender and the tops are slightly golden.
- 13. Remove the peppers from the oven and let them cool slightly before serving.
