Ingredients
- 1kg 1kg Green Pepper
- 500 G Rummo Spaghetti Pasta 500g
- 1 Pack Planet Organic G's Baby Leaf Spinach
- Single Capsicum/Green Pepper (Single)
- 1Pc Avacado 1pc
- - Anchor Salted Butter 200g
- - Chilli Powder Rajah
- 100 G Jumbo Garlic 100g
- 750 G Top-Op Table Salt Drums
Instructions
- 1. Begin by preparing the vegetables. Wash the green pepper and spinach thoroughly. Dice the green pepper into small cubes and set aside. Pat the spinach dry and keep it ready for cooking.
- 2. Bring a large pot of water to a boil. Add a generous pinch of salt to the water. Once boiling, add the spaghetti pasta and cook according to the package instructions until al dente. Drain the pasta, reserving 1 cup of pasta water, and set aside.
- 3. While the pasta is cooking, prepare the garlic. Peel and finely mince the garlic.
- 4. In a large skillet or pan, melt 2 tablespoons of butter over medium heat. Once melted, add the minced garlic and sauté for 1-2 minutes until fragrant.
- 5. Add the diced green pepper to the skillet and cook for 3-4 minutes, stirring occasionally, until slightly softened.
- 6. Stir in the spinach and cook for another 2-3 minutes, or until the spinach is wilted.
- 7. While the vegetables are cooking, prepare the avocado. Scoop out the flesh and mash it into a creamy consistency in a small bowl. Set aside.
- 8. Once the vegetables are cooked, reduce the heat to low and add the cooked pasta to the skillet. Toss everything together to combine.
- 9. Stir in the mashed avocado, ensuring it coats the pasta evenly. If the mixture seems too thick, gradually add the reserved pasta water, a few tablespoons at a time, until the desired consistency is achieved.
- 10. Season the pasta with a pinch of salt and a sprinkle of chili powder to taste. Mix well.
- 11. For a finishing touch, garnish the pasta with a handful of cashews for added crunch and flavor.
- 12. Serve the Spinach Avocado Pasta warm and enjoy!
