Instructions

  1. 1. Preheat your oven to 200°C (180°C fan) or Gas Mark 6. Line a large baking tray with parchment paper.
  2. 2. Prepare the vegetables: Slice 4 large portobello mushrooms, 3 mixed-color bell peppers (red, yellow, and green), and 1 large red onion into thin strips.
  3. 3. In a large mixing bowl, combine 3 tbsp olive oil, 2 tsp smoked paprika, 1 tsp ground cumin, 1/2 tsp chili powder, 1/2 tsp garlic powder, 1/2 tsp onion powder, and a pinch of salt and pepper. Toss the sliced vegetables in this spice mixture until evenly coated.
  4. 4. Spread the seasoned vegetables in an even layer on the lined baking tray. Roast in the preheated oven for 20 minutes, stirring halfway through, until tender and slightly charred.
  5. 5. While the vegetables are roasting, warm 8 small whole wheat tortillas in a dry skillet over medium heat for 1 minute per side or wrap them in foil and place in the oven for the last 5 minutes of roasting.
  6. 6. Prepare the toppings: Dice 1 ripe avocado, chop 50 g fresh coriander, crumble 100 g feta cheese, and slice 1 lime into wedges. Optionally, prepare a quick salsa by mixing 2 diced tomatoes, 1/4 diced red onion, 1 tbsp lime juice, and a pinch of salt.
