- - Schwartz Flat Leaf Parsley
- 500G Andritsaina Kritharaki Orzo, 500G
- - Biona Organic Whole Cherry Tomatoes
- 1 Piece Cucumber 1Pc
- 1 Kg Red Onion 1kg
- 1 Block Greek Feta Cheese 900g
- - Filippo Berio Garlic Flavoured Olive Oil
- 250 Ml PLJ Lemon Juice Original Sharp 500ml
- 100 G Jumbo Garlic 100g
- 40G Kalios Greek Dried Oregano Branches, 40G
- 50G Pepper Black Ground BWFO
- - Ponti Red Wine Vinegar
- 750 G Top-Op Table Salt Drums
Instructions
- 1. Bring a large pot of salted water to boil. Add the orzo and cook for 8-10 minutes until al dente, stirring occasionally. Drain and rinse under cold water to cool, then transfer to a large mixing bowl.
- 2. While the orzo is cooling, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber, finely chop the red onion, and roughly chop the fresh parsley.
- 3. In a small bowl, whisk together the olive oil, freshly squeezed lemon juice, red wine vinegar, minced garlic, dried oregano, salt, and pepper to create the dressing.
- 4. Add the chopped vegetables (tomatoes, cucumber, onion, and parsley) to the cooled orzo. Crumble the feta cheese over the top.
- 5. Pour the dressing over the salad and gently toss to combine, ensuring the orzo and vegetables are evenly coated. Taste and adjust seasoning as needed.
- 6. Garnish with a sprinkle of extra parsley and serve immediately, or refrigerate for up to 2 hours to allow the flavors to meld. Serve chilled or at room temperature.
