Instructions
- 1. Preheat your oven to 200°C (400°F). Line a baking tray with parchment paper.
- 2. Season the turkey breast with olive oil, salt, pepper, and paprika. Place it on the prepared baking tray and roast for 25-30 minutes, or until the internal temperature reaches 74°C (165°F). Remove from oven and let it rest for 5 minutes before slicing thinly.
- 3. While the turkey is cooking, prepare the honey mustard dressing. In a small bowl, whisk together honey, Dijon mustard, apple cider vinegar, olive oil, garlic powder, salt, and pepper until smooth. Set aside.
- 4. Chop the romaine lettuce, cucumber, cherry tomatoes, red onion, and bell peppers into bite-sized pieces. Add them to a large salad bowl.
- 5. Slice the avocado and add it to the salad bowl along with the cooked turkey slices.
- 6. Drizzle the honey mustard dressing over the salad and toss gently to coat all ingredients evenly.
- 7. Sprinkle the salad with toasted sunflower seeds for added crunch and flavor.
- 8. Serve immediately, ensuring that each portion contains an even balance of turkey, veggies, and dressing.
