Ingredients
- 2.46 Kg Typically Packington Free Range Large Chicken
- 60G Terre Exotique Black Sao Tome Pepper, 60G
- 2 X 320G Jus-Rol Shortcrust Sheets Frozen
- - Tata Salt
Instructions
- 1. Place 500 g of chicken in a large pot and cover with water, ensuring the water level is about 1 inch above the chicken.
- 2. Bring the water to a boil, then reduce the heat to a simmer. Cover and cook the chicken until tender, about 25-30 minutes.
- 3. Remove the chicken from the pot and allow it to cool. Once cool enough to handle, debone the chicken and shred it into bite-sized pieces.
- 4. Bring the cooking liquid back to a boil and add 1 package of shortcrust pastry, breaking it into smaller pieces if necessary.
- 5. Cook the shortcrust pastry in the boiling liquid until tender, about 8-10 minutes. Skim off any excess fat from the surface as needed.
- 6. Return the shredded chicken to the pot and stir to combine. Season with 1 tsp salt and 1/2 tsp pepper, adjusting to taste.
- 7. Simmer for an additional 5 minutes to allow the flavors to meld.
- 8. Serve the dish piping hot, ensuring each portion has a generous amount of chicken and pastry.
