  • - Nearly Naked Veg Basil 100g
  • 50G Pepper Black Ground BWFO
  • - Mowi Scottish Salmon Fillets

  • 220 Ml The Coconut Collab Plant-Based Double Cream
  • 165G Philadelphia Original Soft Cream Cheese

Instructions

  1. Preheat the oven to 200°C (400°F). Line a baking tray with parchment paper.
  2. Pat dry 2 salmon fillets (about 300g) with a paper towel. Season both sides with salt and pepper.
  3. In a small bowl, mix 2 tbsp of pesto with 1 tbsp of olive oil. Brush this mixture evenly over the salmon fillets.
  4. Place the salmon fillets on the prepared baking tray. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  5. While the salmon is baking, heat 1 tbsp of olive oil in a pan over medium heat. Add 2 minced garlic cloves and sauté until fragrant.
  6. Pour in 1 cup of plant-based double cream and bring to a gentle simmer. Stir in 2 tbsp of pesto and 1/4 cup of grated Parmesan cheese. Cook until the sauce thickens slightly.
