About this recipe

Ingredients

  • 300G Picard Msc Scallops With Tomato & Rosemary
  • 200G Picard - Breaded Shrimp
  • 110G Octopus With Garlic, 110G
  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 3 Per Pack Wholegood Organic Mixed Peppers
  • - Sunita Lemon Juice Organic
  • - Red Sweet Potato
  • 125G Florette Mixed Salad
  • - Tata Salt

Instructions

  1. 1. Blanch 1/2 lb shrimp, 1/2 lb scallops, and 1/2 lb octopus in boiling water for 2 minutes, then immediately transfer to an ice bath to cool.
  2. 2. Peel the shrimp and cut the octopus into bite-sized pieces.
  3. 3. In a glass or ceramic bowl, combine the shrimp, scallops, and octopus with 1 thinly sliced onion, 3 finely chopped hot peppers, and 1 tsp salt.
  4. 4. Squeeze enough lemon juice (about 1 cup) to cover the seafood mixture completely. Stir well to combine.
  5. 5. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight, stirring occasionally to ensure even marination.
  6. 6. Once marinated, the lemon juice will have 'cooked' the seafood and pickled the onions. Stir the mixture one final time before serving.
  7. 7. Serve chilled on a bed of mixed salad, surrounded by slices of room-temperature sweet potato for a balanced and colorful presentation.
