- 200G Picard - Breaded Shrimp
- 110G Octopus With Garlic, 110G
- 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
- 3 Per Pack Wholegood Organic Mixed Peppers
- - Sunita Lemon Juice Organic
- - Red Sweet Potato
- 125G Florette Mixed Salad
- - Tata Salt
Instructions
- 1. Blanch 1/2 lb shrimp, 1/2 lb scallops, and 1/2 lb octopus in boiling water for 2 minutes, then immediately transfer to an ice bath to cool.
- 2. Peel the shrimp and cut the octopus into bite-sized pieces.
- 3. In a glass or ceramic bowl, combine the shrimp, scallops, and octopus with 1 thinly sliced onion, 3 finely chopped hot peppers, and 1 tsp salt.
- 4. Squeeze enough lemon juice (about 1 cup) to cover the seafood mixture completely. Stir well to combine.
- 5. Cover the bowl with plastic wrap and refrigerate for at least 4 hours or overnight, stirring occasionally to ensure even marination.
- 6. Once marinated, the lemon juice will have 'cooked' the seafood and pickled the onions. Stir the mixture one final time before serving.
- 7. Serve chilled on a bed of mixed salad, surrounded by slices of room-temperature sweet potato for a balanced and colorful presentation.
