Instructions
- 1. Preheat your oven to 400°F (200°C) and lightly grease a baking pan.
- 2. Zest the lime and set the zest aside in a small bowl.
- 3. Peel and dice the mango into bite-sized pieces.
- 4. In a mixing bowl, combine the mango. Add 1 tablespoon of lime juice, 1/8 teaspoon of ground red pepper, and a pinch of salt. Mix well and top with 1 teaspoon of the lime zest. Set the salsa aside.
- 5. In a separate bowl, prepare the glaze by combining 2 teaspoons of chili powder, 1/8 teaspoon of ground red pepper, a pinch of salt, 2 tablespoons of Wilderbee Hot Honey, 1 tablespoon of lime juice, and the remaining lime zest. Mix thoroughly.
- 6. Place the salmon fillets in the prepared baking pan. Brush both sides of the salmon generously with the prepared glaze.
- 7. Bake the salmon in the preheated oven for 15 minutes, flipping the fillets halfway through the cooking time to ensure even cooking.
- 8. While the salmon is baking, pour any remaining glaze into a small saucepan. Bring it to a boil over medium-high heat, then reduce the heat to low and simmer for 15 minutes, stirring occasionally, until slightly thickened.
- 9. Once the salmon is cooked through and flakes easily with a fork, remove it from the oven.
- 10. To serve, place a salmon fillet on each plate and drizzle with the reduced glaze. Add 2 tablespoons of the tropical fruit salsa to each plate and garnish with lime slices. Serve immediately.
