Instructions
- 1. Preheat your oven to 200°C (400°F) and line a baking tray with parchment paper.
- 2. Place the bacon strips on the tray and bake for 12-15 minutes, or until crispy. Remove and let cool before chopping into bite-sized pieces.
- 3. While the bacon cooks, heat a grill pan or skillet over medium-high heat. Season the chicken breasts with salt, black pepper, and garlic powder on both sides.
- 4. Add 1 tablespoon of olive oil to the pan and grill the chicken for 6-8 minutes per side, or until fully cooked (internal temperature of 75°C / 165°F). Remove from heat and let rest for 5 minutes before slicing thinly.
- 5. Prepare the salad base by washing and drying the mixed greens, cherry tomatoes, cucumber, and red onion. Slice the cucumber and red onion thinly and halve the cherry tomatoes.
- 6. In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, and red onion. Add the chopped bacon and sliced chicken on top.
- 7. Drizzle the ranch dressing over the salad and toss gently to coat all the ingredients evenly.
- 8. Serve immediately, garnished with freshly chopped parsley for added freshness.
