Instructions

  1. 1. Cut 1 lb of boned, skinned chicken breast into 1 x 1 1/2-inch pieces.
  2. 2. Dredge the chicken pieces in 1 cup of flour and let them stand for 15 minutes.
  3. 3. In a bowl, whisk together 1/2 cup of chickpea flour and 1/2 cup of water, 1/4 teaspoon of salt, and a pinch of pepper. Add the chicken pieces to the mixture and let them stand for 10 minutes.
  4. 4. Dredge the marinated chicken pieces in flour again, ensuring they are evenly coated.
  5. 5. Heat oil in a deep fryer or large pot to 375°F. Deep fry the chicken pieces in batches for 3 to 5 minutes until golden brown and fully cooked. Drain on paper towels.
  6. 6. Cook 2 cups of rice according to package instructions and divide between serving bowls.
  7. 7. Spoon bouillon sauce over the rice and top with the fried chicken pieces.
