Instructions
- 1. Heat the olive oil in a large pot over medium heat and add the hing (asafoetida). Stir for 30 seconds to release its aroma.
- 2. Add the diced bell pepper, shredded cabbage, and diced courgettes to the pot. Sauté the vegetables for 5-7 minutes until they start to soften.
- 3. Stir in the chopped tomatoes, green beans, and corn kernels. Cook for another 3-5 minutes, mixing well.
- 4. Sprinkle in the ground cinnamon, turmeric, smoked paprika, and dried thyme. Stir to coat the vegetables evenly with the spices.
- 5. Pour in the coconut milk and 300ml of water. Bring the mixture to a gentle boil, then reduce the heat to low and simmer for 15-20 minutes until the vegetables are tender and the flavors meld together.
