Instructions

  1. 1. Halve, pit, and peel the avocados, then set them aside.
  2. 2. Drain the canned tuna and gently separate it into chunks using a fork.
  3. 3. Finely chop the green onion and celery, then toss them with the tuna in a mixing bowl.
  4. 4. Arrange the avocado halves on lettuce-lined plates and fill each half with the tuna mixture.
  5. 5. In a small jar with a tight lid, combine 1/3 cup oil, 1 1/2 tablespoons lemon juice, 1/8 teaspoon dry mustard, 1 minced clove of garlic, 1/4 teaspoon salt, 1/2 teaspoon pepper, and 1 1/2 teaspoons chopped parsley.
