Instructions
- 1. Preheat your oven to 200°C (180°C fan/gas mark 6). Line a baking tray with parchment paper for easy cleanup.
- 2. On the prepared tray, toss the sweet potato cubes and red onion wedges with 2 tablespoons of olive oil, smoked paprika, cumin, salt, and pepper. Spread them out evenly and roast for 25 minutes, flipping halfway through.
- 3. While the vegetables roast, rinse the quinoa under cold running water to remove any bitterness. Combine the quinoa with 500 ml of vegetable stock in a medium saucepan. Bring to a boil, then lower the heat to a simmer and cook for 15 minutes, or until the water is absorbed.
- 4. In a small bowl, whisk together the Dijon mustard, lemon juice, maple syrup, 2 tablespoons of olive oil, and a pinch of salt and pepper to make the dressing. Adjust seasoning to taste.
- 5. Once the quinoa is cooked, fluff it with a fork and set aside to cool slightly. Remove the roasted vegetables from the oven and let them rest for 5 minutes.
- 6. To assemble, divide the quinoa evenly among four bowls. Top with a generous handful of fresh arugula, a portion of roasted sweet potatoes and onions, and the cherry tomato halves.
- 7. Drizzle the mustard dressing over each bowl and sprinkle with toasted sunflower seeds for added crunch. Serve warm and enjoy!
