Instructions
- 1. Preheat your oven to broil and position the rack about 8 inches from the top.
- 2. In a medium bowl, whisk together 1 cup of egg whites, 1/4 teaspoon of salt, and 2 tablespoons of unsweetened almond milk until well combined.
- 3. Heat a non-stick or cast-iron skillet over medium-high heat.
- 4. Pour the egg white mixture into the skillet and cook for about 2 minutes, gently tilting the pan to distribute the mixture evenly as it begins to set.
- 5. Once the eggs start to firm up but are still slightly runny on top, evenly distribute 1/2 cup of cooked chicken chunks, 1/4 cup of chopped spinach, and 1/4 cup of finely chopped onion over one half of the omelet.
- 6. Sprinkle 2 pinches of Parmesan shavings over the filling, then turn off the heat.
- 7. If not using an oven-safe skillet, carefully transfer the omelet to a baking dish.
- 8. Place the skillet or baking dish under the broiler and cook for 2 minutes, keeping the oven door slightly open to monitor.
- 9. Remove the omelet from the oven, fold it in half using a spatula, and return it to the broiler for another 1-2 minutes until the top is golden brown.
- 10. Remove from the oven, sprinkle the remaining pinch of Parmesan cheese on top, and serve immediately.
