Ingredients

  • 395G D'Aucy Chopped Spinach
  • 1 Kg Fresh Onion Pack. 1kg - Ofoodi African Store
  • 500G Two Chicks Free Range Liquid Egg White
  • NaN Unsweetened Almond Beverage
  • - Mantova Extra Virgin Olive Oil Spray
  • 50G Top-Op Nutmeg Powder 50g

Instructions

  1. 1. Boil, steam, or microwave 200 g of spinach until tender, then rinse under cold water, drain thoroughly, and chop finely.
  2. 2. Heat 1/2 teaspoon olive oil in a non-stick pan over medium heat. Add 1/2 finely chopped onion and 1 tablespoon water, cover, and cook until the onion is soft, about 3-4 minutes.
  3. 3. In a mixing bowl, combine the chopped spinach, cooked onion mixture, a pinch of nutmeg, 2 egg whites, and 2 tablespoons unsweetened almond milk. Mix well until evenly combined.
  4. 4. Lightly grease 4 egg rings with a small amount of olive oil. Heat 1/2 teaspoon olive oil in a non-stick pan over medium heat, place the egg rings in the pan, and fill each with the egg mixture.
  5. 5. Cook the frittatas until the mixture is set, about 4-5 minutes. Carefully remove the egg rings, flip the frittatas, and cook for another 2-3 minutes until lightly browned on the other side.
