Ingredients
- - Jalpur Fresh Peas - (Garden Peas)
- 50 G Vandevi Asafoetida 50g
- - Potts Vegetable Stock Can
- - Ktc Coconut Milk 400ml
- 250 Ml PLJ Lemon Juice Original Sharp 500ml
- 25G Natco Mint
- 50G Pepper Black Ground BWFO
- 750 G Top-Op Table Salt Drums
Instructions
- 1. Heat the olive oil in a large pot over medium heat. Add the asafoetida and chopped leek, sautéing gently for 2-3 minutes until the leek is softened but not browned.
- 2. Add the green peas to the pot and stir well to coat them in the flavored oil. Cook for 1-2 minutes to allow the peas to absorb the flavors.
- 3. Pour in the vegetable stock and bring the mixture to a gentle boil. Reduce the heat to low and simmer for 8-10 minutes, or until the peas are tender.
- 4. Remove the pot from the heat and stir in the fresh mint leaves. Allow the mixture to cool slightly before blending.
- 5. Using an immersion blender or a countertop blender, blend the soup until smooth and creamy. Add the coconut milk, salt, and black pepper, blending again to combine.
- 6. Return the soup to the pot and gently reheat over low heat without boiling. Adjust seasoning with additional salt or pepper if needed.
- 7. Squeeze in fresh lemon juice just before serving for a bright, zesty finish. Serve hot, garnished with a sprig of mint if desired.
