Instructions

  1. 1. Rinse 1 cup of organic red quinoa under cold water to remove any impurities. In a pot, bring 2 cups of vegetable broth to a boil. Add the rinsed quinoa, reduce heat, cover, and let simmer for 15 minutes or until tender and fluffy.
  2. 2. Preheat the oven to 400°F (200°C). In a large mixing bowl, combine diced zucchini, eggplant, red bell pepper, yellow bell pepper, cherry tomatoes, and red onion. Add 2 tablespoons of olive oil, 1 teaspoon of garlic powder, 1 teaspoon of dried thyme, 1 teaspoon of salt, and 1/2 teaspoon of ground white pepper. Toss until evenly coated.
  3. 3. Spread the vegetable mixture evenly on a baking sheet and roast in the preheated oven for 20 minutes, stirring halfway through, until the vegetables are tender and slightly caramelized.
