- 50G Picard Chopped Flat Parsley
- 300G Fish Said Fred Msc Big Cod Fillets
- 400 Ml Coconut Merchant Organic Coconut Cream
- 1kg 1kg Green Pepper
- 1 Kg Red Onion 1kg
- 100 G Jumbo Garlic 100g
- 250 ml Critida Lemon Infused Olive Oil 250Ml
- 70G Mill & Mortar Citrus Salt Flakes, 70G
Instructions
- 1. Preheat your oven to 375 degrees F (190 degrees C).
- 2. In a saucepan over medium-low heat, combine 1 cup of unsweetened coconut cream, 1/2 cup of green curry sauce, 1 teaspoon of parsley, and a pinch of salt. Stir well and cook until the mixture is heated through, about 3-4 minutes.
- 3. Heat 1 tablespoon of olive oil in a skillet over medium-high heat. Add 1 diced green bell pepper, 1 diced red onion, and 3 minced garlic cloves. Sauté for about 5 minutes, or until the vegetables are softened.
- 4. Place 500 g of cod fillets in a baking dish. Spread the sautéed vegetables evenly over the fish, then pour the coconut cream mixture over the top, ensuring the fish is well coated.
- 5. Bake in the preheated oven for 30 minutes, stirring the sauce and vegetables gently halfway through, until the cod is cooked through and flakes easily with a fork.
- 6. Serve the baked cod with the green curry sauce and vegetables spooned over the top. Enjoy your delicious and healthy dinner!
