- - Cofresh Whole Green Chilli 350g
- 50G Pepper Black Ground BWFO
- 1 Bunch Spring Onions 1 Bunch
- - Fresh Asian Coriander Bunch
- 400 Ml Ktc Coconut Milk 400Ml
- 450G Pack'D Organic Super Sweet Sweetcorn
- 1 L Crisp N Dry Oil
- - Flying Goose Sriracha Hot Chilli Sauce
- - Amoy Dark Soy Sauce
- 750 G Top-Op Table Salt Drums
- 1.5 Kg Best In Plain Flour 1.5 Kg
Instructions
- 1. Drain and rinse the sweetcorn to remove any excess liquid. Set aside.
- 2. Finely chop the spring onions, coriander, and green chili. Keep them ready for mixing.
- 3. In a large mixing bowl, combine the plain flour, baking powder, salt, and ground black pepper. Mix well to ensure the dry ingredients are evenly distributed.
- 4. Gradually add the coconut milk to the dry ingredients while stirring to form a smooth batter. The consistency should be thick enough to coat the back of a spoon.
- 5. Fold the drained sweetcorn, chopped spring onions, coriander, and green chili into the batter. Mix gently to ensure the ingredients are evenly distributed.
- 6. Heat cooking oil in a frying pan over medium heat. Once the oil is hot, drop spoonfuls of the batter into the pan, flattening slightly to form fritters.
