- - Holland & Barrett Jumbo Blanched Peanuts 200g
- - Tamicon Tamarind Concentrate 200g
- - Blue Dragon Pad Thai Noodle Kit
- 250G Garlic 250g
- 1 Lime - 1 Each
- 250 G Onion Shallots 300g
- 1 Onion Red 1 Each
- 1 L Ktc Sunflower Oil
- - Chings Red Chilli Sauce
- 1 Kg Tate & Lyle Fairtrade Light Soft Brown Sugar
Instructions
- 1. Begin by preparing your ingredients. Thinly slice the red bell pepper and chop the whole baby okra into bite-sized pieces. Set these aside. Measure out 2 tablespoons of garlic & ginger paste, 1 tablespoon of dark soy sauce, 2 tablespoons of light soft brown sugar, 1 tablespoon of red chili sauce, and 2 tablespoons of tamarind concentrate. Open the noodle kit and set the noodles and sauce packet aside.
- 2. Heat 1 tablespoon of cooking oil in a large pan or wok over medium heat. Add the garlic & ginger paste and sauté for 1-2 minutes until fragrant.
- 3. Add the chopped okra and sliced red bell pepper to the pan. Stir-fry for 4-5 minutes until the vegetables are tender and slightly caramelized.
- 4. Stir in the dark soy sauce, light soft brown sugar, red chili sauce, and tamarind concentrate. Mix well to combine and allow the flavors to meld for 1-2 minutes.
- 5. Add the noodles from the kit (prepared according to the package instructions) to the pan. Toss the noodles with the vegetables and sauce until everything is evenly coated.
- 6. If desired, add a spoonful of Thai green curry paste for an extra layer of fragrance and flavor. Stir well to incorporate.
- 7. Allow the mixture to cook for 4-5 minutes, stirring occasionally, until the noodles are fully cooked and the sauce is absorbed.
