- 1. Heat the sunflower oil in a large saucepan over medium heat. Add asafoetida and let it cook for 30 seconds to release its aroma.
- 2. Add the cherry tomatoes, red bell pepper, green beans, and zucchini to the pan. Stir-fry for 3-4 minutes until slightly softened.
- 3. Pour in the coconut milk, soy sauce, tamarind paste, and jaggery. Mix well and bring the mixture to a gentle simmer.
