  • 6 Per Pack Gran Luchito Soft Burrito Shell Tortilla Wraps
  • - Chilli Powder Rajah
  • 1 L Crisp N Dry Oil

Instructions

  1. 1. Rinse the rice thoroughly under cold water until the water runs clear. Cook the rice according to the package instructions, adding a pinch of salt to the water for flavor. Once cooked, set the rice aside and keep it warm.
  2. 2. Heat a tablespoon of cooking oil in a large pan over medium heat. Finely chop the onion and garlic, then add them to the pan. Sauté until the onions are translucent and the garlic is fragrant, about 3-4 minutes.
  3. 3. Add the cumin seeds to the pan and toast for 1 minute until aromatic. Then, finely chop the green chillies and add them to the pan along with a teaspoon of chilli powder. Stir well to combine.
  4. 4. Pour in the cherry tomatoes, crushing them slightly with the back of a spoon to release their juices. Simmer the mixture for 5-7 minutes, allowing the flavors to meld together.
  5. 5. Drain and rinse the kidney beans, then add them to the pan. Stir to combine and cook for another 5 minutes, ensuring the beans are heated through and coated in the tomato-spice mixture.
  6. 6. Warm the tortilla wraps in a dry skillet over medium heat for about 30 seconds on each side, or according to the package instructions.
  7. 7. To assemble the burritos, place a warm tortilla on a flat surface. Add a generous scoop of the cooked rice, followed by the spiced kidney bean mixture. Optionally, sprinkle with additional salt to taste.
  8. 8. Fold the sides of the tortilla inward, then roll it tightly from the bottom to form a burrito. Repeat with the remaining tortillas and filling.
