Instructions
- 1. Rinse the rice thoroughly under cold water until the water runs clear. Cook the rice according to the package instructions, adding a pinch of salt to the water for flavor. Once cooked, set the rice aside and keep it warm.
- 2. Heat a tablespoon of cooking oil in a large pan over medium heat. Finely chop the onion and garlic, then add them to the pan. Sauté until the onions are translucent and the garlic is fragrant, about 3-4 minutes.
- 3. Add the cumin seeds to the pan and toast for 1 minute until aromatic. Then, finely chop the green chillies and add them to the pan along with a teaspoon of chilli powder. Stir well to combine.
- 4. Pour in the cherry tomatoes, crushing them slightly with the back of a spoon to release their juices. Simmer the mixture for 5-7 minutes, allowing the flavors to meld together.
- 5. Drain and rinse the kidney beans, then add them to the pan. Stir to combine and cook for another 5 minutes, ensuring the beans are heated through and coated in the tomato-spice mixture.
- 6. Warm the tortilla wraps in a dry skillet over medium heat for about 30 seconds on each side, or according to the package instructions.
- 7. To assemble the burritos, place a warm tortilla on a flat surface. Add a generous scoop of the cooked rice, followed by the spiced kidney bean mixture. Optionally, sprinkle with additional salt to taste.
- 8. Fold the sides of the tortilla inward, then roll it tightly from the bottom to form a burrito. Repeat with the remaining tortillas and filling.
- 9. Serve the burritos warm, optionally accompanied by your favorite sides such as salsa, guacamole, or a fresh salad.
