Instructions

  1. 1. In a large saucepan, heat 1 tablespoon of olive oil over medium heat. Add 1 cup of chopped onion, 1/2 cup of diced green pepper, and 2 minced garlic cloves. Sauté for 5-7 minutes until the vegetables are softened.
  2. 2. Stir in 1 teaspoon of chili powder, 1/2 teaspoon of dried basil, 1/4 teaspoon of salt, and 1/4 teaspoon of pepper. Cook for 1 minute to toast the spices.
  3. 3. Add 1 can (14.5 oz) of undrained diced tomatoes, 1 can (15 oz) of cannellini beans (rinsed and drained), and 1 cup of tomato sauce. Stir well to combine.
  4. 4. Bring the mixture to a boil, then reduce the heat to low. Cover and simmer for 20 minutes, stirring occasionally to prevent sticking.
  5. 5. Taste and adjust seasoning if needed. Serve hot as a main dish, garnished with fresh basil if desired.
